Drying mushrooms and percentage of water

Drying mushrooms and percentage of water

Fresh mushrooms are \(90\%\) water by mass. After drying they are \(60\%\) water by mass. Assume that only water is lost during drying.

  1. Find the mass of dried mushrooms obtained from \(50\text{ kg}\) of fresh mushrooms.[3]
  2. Mushrooms of mass \(M\text{ kg}\) are \(a\%\) water and are dried until they are \(b\%\) water, where \(b<a<100\). Show that the dried mass is \(\dfrac{M(100-a)}{100-b}\text{ kg}\).[2]
  3. Ali says that drying mushrooms from \(90\%\) water to \(45\%\) water halves their mass. Use part (b) to explain whether he is correct.[2]

Answer:(a) \(12.5\text{ kg}\) (b) dry matter \(\dfrac{(100-a)M}{100}\) is \((100-b)\%\) of the dried mass (c) wrong: the mass becomes \(\dfrac{2}{11}M\), not \(\dfrac12M\)
